Did you know that you can add quick cooking or minute oats to any pancake, muffin, cookie or loaf recipe to enhance the nutritional value and the flavour? I do it all the time! Just toss in a large handfulof your choice of oats and taste the flavour impact. No need to change any other ingredient amount! The result will WOW you with a slightly nutty flavour without the addition of any nuts and you will have added extra fibre. In this case, fibre equals flavour!
Ingredients
Dry ingredients:
- 1 cup all purpose flour
- 1 cup oat flour
- 2 tsp. baking powder
- 1 tsp. sea salt
- 2 shakes cinnamon
- 3 tbsp. sugar
Dry ingredients:
- 1 1/3 milk
- 1 beaten egg
- 1 mashed organic banana
- 4 tsp. melted butter
Preparation
Put all the dry ingredients into a large bowl and mix thoroughly by stirring with a spurtle and pounding out all the lumps. The Porridge Mom spurtle does an excellent job!
In a large measuring cup, put the milk, the beaten egg and the mashed banana.
Add the milk mixture and the melted butter to the dry ingredients and mix by stirring with a spurtle until just mixed. Do not over mix!
Spoon the mixture onto a hot griddle and cook until bubbles begin to form. Once they do, flip the cakes to cook the underside and then remove from the pan.
Serve with butter, yogurt, fresh berries, maple syrup. A warm berry coulis is a delicious choice instead of syrup. Or, enjoy both!
Coulis recipe: Put 1 cup of frozen or fresh berries with a tsp. of unsalted butter into small pot and stir over medium heat until the butter is melted. Spoon over pancakes and enjoy!
